Like most of the population of the United States, I've started 2013 on a health kick. There are a lot of reasons I've really enjoyed it so far, besides the health benefits: I'm getting to work about 10 minutes earlier, and it's awesome to have almost all my meals totally laid out for me the night before. And then I got a belated Christmas present - one of these glass sets - that fueled my desire for cute little lunches even more.
Part of the health kick was extra exercise, and entertainment for that ended up being health movies. I started with Food, Inc. which was totally fascinating and then moved to Forks Over Knives that lead me to wonder what life would look like if I dropped all meat from 2 out of my 3 meals for the day. Would that be the only way for me to get enough vegetables a day?
I switched to vegetarian stuffed peppers, which turned out great. I've found that because I have a heap load of vegetables at 10am I'm fuller (and an interesting side effect: I now CRAVE vegetables at 10am regardless of what I've eaten or where I am). And it's super awesome to finally get enough vegetables...plus it feels great.
I'm still having some meat for dinner, but loading up on veggies first. I'm shocked at how an avid meat lover doesn't find this too crazy, complicated, or depriving. Maybe I have a future in being veg.
